(Disclaimer: It's not my fault if you arn't good enough with computers that you somehow mess yours up beyond all recovery, or destroy your PES3 install. If you feel uncomfortable doing this, either don't, or find someone to help that is more comfortable with it.)
There have been a few requests for a detailed walkthrough on how to install some of these patches. (Read: Spoonfeed how to install Wolf's patch)
There are two techniques that you need to know to install his big patch pack and I'll show those to you here. The first one is simple, its just navigate to the proper place in the afs file and then import a directory. The second one is search for the filename you want to replace, find it and import the new file. Basically you just repeat these steps over and over until you have patched the game to your liking.
Getting Ready
Generally you need to download the patch, and then have a tool to extract it. You'll need WinZip or WinRar (to name a few) to extract the patch file. You can find those with a simple google search if you dont have them already.
Un-compressing the patch
Here I downloaded the patch and its in my general purpose PES3 folder on my hard drive. You can pretty much follow the picture to get it extracted.
Importing a Folder into your AFS file
Here is helpful for common things like, uniforms, referee kits, adboards, and various other things that get released as entire folders. Some people get tripped up on importing them because the folder name is too long. The main tools people use to install these have a pretty bad bug/error/limit in that regard. So to deal with that, we create a new folder on your hard drive (some of you might have it already) c:\tmp. Then we'll copy the folder from Wolf's pack we are going to install to there and that will allow us to successfuly import the folder into the game. Now here is how you do it.
First we need to find the folder we want to import, and copy that to the c:\tmp location I mentioned.
Now that we have that there, we can open AFS Explorer (AFS Extract works too) and open our data file.
Now navigate to the location in the AFS file that we are going to import over and select that folder. Now go up to the Action menu and select Import Folder. You'll now have a screen like this, where you'll navigate to that new folder we made.
Tada, you have successfuly imported that folder into the game. Now repeat this process for similar parts of Wolf's patch. It would be frivilous for me to go into inordinate detail and describe how to install each folder. I'll assume that most of you can see which ones install in these two methods.

Now to install the other way. You have a file, in our example we'll use the new sound file BGM_23.bin. But lets say you have NO CLUE where it goes in the afs file. Well go up to the Action -> Search menu. Now type in the name (case sensitive) and it should find the file like in this diagram.
Now you can go up to the Action -> Import File menu and navigate to that new BGM_23.bin file and select ok.
Now you just follow this procedure for the other parts of the patch. Alternating between these two techniques will get the entire patch installed. These techniques also apply to putting anything into your afs file. The only other thing that might need mentioning is increasing file space to import a particular file. But the main patch packs out there dont require this, and you really only run into that if you are working on a patch yourself...at which point you should know what you are doing so I don't need to explain it here.
