The addition of penguins and stuff in the game is jokes, just played my mate, me as Dinosaurs and him as Penguins.
To get them unlock them at the shop first (obviously) then selected a team that doesn't have a licensed kit (not totally sure about this one) and then get to the screen where you modify kits to be used in the game and then press start, you should be able to select them here.
