Ribéry got 88 Attack, 91 Dribble Acc, 87 Ball Control, 94 Dribble Speed, 88 Explosive Power, 85 Body Balance and 74 Mentality.
Dribble Acc and Speed and Top Speed;
Ribery dribbles by pushing and forcing the opponent off balance, and he is agressive and persistent as hell when he's on the ball, 84 should be enough. Having 85 TS and 91 DS makes him quite fast on the ball and I can't really object to that setting. If TS goes up, DS needs to go down.
Ball Control;
He is not especially gifted with the ball, his main problem against good teams is that he touches the ball too far too often, 82 should be enough.
Balance and Mentality;
He falls easily very often, and 85 Balance is too much, either that or he's a huge faker. He could arguably have more mentality as he, as mentioned, is persistent as hell when he's on or around the ball, but he also lose focus easily, and since mentality is a combined stat 74 might be alright.
All in all I think he is overrated, but having 5 form does count negatively, and I am not 100% sure how Konami balance form vs abilities anymore. Ribéry on top form is a beast, but generally he's nothing special. With my settings he is still a beast when on orange and red form.
Regarding Obafemi Martins, he is still a very fast player, I'd say 91 TS and 92-ish DS should be quite right, and 97 TS and 87 DS is very comparable to that setting when he's on the ball. He is only 27 years old, so he wasn't even professional 10 years ago like someone mentioned.
