There is basic shooting aswell, the same as what was there before.

With advanced you have to hold the left stick away from goal to get low shots, and towards for high. It also uses a target on the goals to show you where it's going. The aiming is manual like fully manual, i think.

Are you sure your not using advanced shooting?

An option file does all that. People create option files that fix kits and names and stuff like that. Some people also create extra teams, and players. You'd have to ask some of the people who are creating teams(I may get in trouble for that). You'll be very lucky lookin for the teams you want...
