Ok, so, firstly, players will retire. We all knew that. However, after they retire, a few years later they will reappear as new players in the "team-less players market pool," and be available to any team (not just the team they retired from a few years earlier). So, Zidane and Baggio and the gang will never go away, haha. They will just come back as new 18 year olds versions of themselves or something.
The players will improve their skills throughout the season and the off-season. You can see their improvements on a special screen. The way players will improve is of course from playing in matches (you can see their performance right away after the match and if they have improved and how much), and also from training.
